3-4 aubergines (eggplants), small-sized
2 onions, medium-chopped
2 cloves garlic, finely-chopped
1 village-style sausage
½ bunch parsley, finely-chopped
4-5 cherry tomatoes
1 tsp tomato paste
2 squids, cleaned
150g crushed tomatoes
A pinch of sugar
200ml Samos sweet wine
150ml olive oil
Cut the aubergines in half, carve lightly in the middle and sauté in hot oil.
In another pot, sauté the onion, garlic, squid and sausage.
When these have finished sautéing, extinguish with the Samos sweet wine, add all of the remaining ingredients and the aubergines, and let everything simmer. Finally, add the salt, pepper, sugar and the finely-chopped parsley.
