Samos kakavia

Ingredients:

 

½ - 2kg fresh fish

4 potatoes

3 onions

1 tomato, small

1 cup olive oil

Salt

Pepper, freshly-ground

2 lemons


Optionally:

 

1 lobster, small

2-3 fresh crabs


Instructions:

 

First, clean the fish and rinse in the sea, if possible.

Peel the potatoes and cut in half. Peel the onions and carve crosswise. Put the potatoes and the onions into a pot and place the fish on the top of these, along with the lobster and the crabs (if added) and the tomatoes, which have also been carved crosswise.

Add water without covering the fish completely, and boil the soup. Shortly before the cooking process is complete, add the olive oil, salt and freshly-ground pepper.

The soup needs to boil for about 30 minutes on high heat.

Lastly, squeeze the two lemons directly into the pot.
