Saddled Seabream with Tziladia Sauce

Ingredients:

2 saddled seabream fish, medium-sized

Salt

Pepper

Oregano

100ml sunflower oil

250ml Samos olive oil

75ml Samos vinegar

½ bunch parsley, finely-chopped

½ onion, finely-chopped


Instructions:

After washing and cleaning the fish well, dry using kitchen paper towel.

Season the fish with salt and pepper, both on the inside and the outside.

Cook in a non-stick, grill-type pan that has been pre-heated well.

After the fish has cooked on both sides, quench with vinegar and transfer to a platter.

In a blender, beat together all of the liquid ingredients, add the aromatic herbs, and then pour this sauce mixture over the fish. Finally, add the chopped onion.
